Pam Bryson is the owner and cookie artist behind Simple Cookie Company, a Northern Virginia cottage bakery specializing in custom hand-decorated sugar cookies, small-batch treats, and beginner-friendly decorating workshops.
What began as a creative outlet quickly grew into a thriving business known for its clean designs, thoughtful details, and warm, welcoming approach to teaching. Pam loves helping people discover the joy of cookie decorating — whether they’re brand new to royal icing or looking for a relaxing, creative night out.
She is now hosting a full calendar of seasonal workshops at the Creative Collective Pop-Up in Fairfax, where students learn piping and flooding techniques, try new skills, and leave with beautifully decorated cookies they’re proud of. Her classes are designed for all skill levels and focus on building confidence through clear, hands-on instruction.
When she’s not teaching or prepping orders, Pam can be found creating custom cookie sets for weddings, birthdays, corporate events, military celebrations, and every sweet moment in between. Her menu also includes made-from-scratch brownies, cake pops, and her crowd-favorite Sweet Stacks sandwich cookies.
